Holiday16: Stuffed Cukes

Ingredients

  • 1/4 cup feta
  • 4 tablespoons sour cream
  • 1⁄3 cup chopped pecans
  • 1⁄2 cup cream cheese, softened
  • 8 cherry tomatoes

Directions

Peel cucumbers. Cut each cucumber into 1/2 -3/4 inch rounds and scoop out seeds. Combine ingredients and stir until well blended. Spoon the mixture into the cucumber cups and top with a slice of tomato.
