Holiday16: Macaroni Shells With Cheese and Pesto


  • For 1 lb macaroni - Serves 4-5
  • 4 cups fresh basil, chopped
  • 1/4 cup cheddar cheese
  • 1/4 mozarela cheese
  • 1/4 cup pine nuts
  • 3 garlic cloves, minced
  • 1/2 to 3/4 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp red pepper flakes, optional


Everything is organic, btw. Add basil to a large bowl. Grate in both cheeses. Add in pine nuts, garlic and 1/4 cup olive oil and stir. Taste to see if you need more oil. Add more if necessary. Add salt, pepper and the red pepper flakes if using. Stir everything together. Cook up macaroni according to package instructions. Add pesto to macaroni and gently stir everything together.
