2015: Lauri's Smoky Cheddar Bites

2015: Lauri's Smoky Cheddar Bites

Ingredients

  • 2 Cups of White or Wheat Flour
  • ½ teaspoon Baking Powder
  • ¾ teaspoon Lauri’s Famous Alder Smoked Sea Salt or simply sea salt for those who don't have my secret stash :-) (And have about another ¾ teaspoon extra to sprinkle on tops)
  • 6 Tablespoons Rumiano salted butter (room temperature)
  • 1 ¾ Cup of finely shredded Rumiano Alder Smoked (by Lauri) White Cheddar
  • 1 ¾ Cup of finely shredded Rumiano Alder smoked (by Lauri) Extra Sharp Cheddar Cheese
  • 4-6 Tablespoons of Ice cold water
  • 1 Large Egg white, lightly beaten

Directions

In my Great Grandma’s Kitchen Aide Mixer I place the Flour, Baking Powder, Lauri’s Famous Alder Smoked Sea Salt, and combine well. You can do in a bowl as well. Then I add the room temperature Rumiano Salted Butter, and the finely grated Alder Smoked (by Lauri) White Cheddar and Alder smoked (by Lauri) Extra Sharp Cheddar Cheeses, until well combined. Now add 2 Tablespoons of the Ice water at a time until the mixture absorbs enough to just stick together when squished. (Up to 6 Tablespoons) Now we divide the dough into two balls, and press each into the shape of a square onto plastic wrap and cover tightly with same, refrigerate for 30-40 minutes. On a lightly floured board or counter roll out into a very thin 1/8” square, Keep in mind you may need to keep reapplying flour to rolling pin to keep it from sticking to the dough. Use a fluted pastry roller or butter knife to cut ¾” horizontal strips, then repeat and make ¾” vertical strips, resulting in little ¾” squares. Use the round end of a Bamboo or wooden Ka-Bob Skewer to make a hole in the center of each one. Now leave all the Smokey Cheddar Bites together, and freeze for 15-20 minutes. (Note these will freeze for up to 3 months, and you can pull out a pre-made batch when you have a hankering for a tasty treat and follow directions below) Pre-Heat your oven to 350* Take ½ of the frozen Lauri’s Smokey Cheddar Bites squares out of the freezer and begin placing squares on parchment lined baking sheet. Once all are placed on the parchment lined baking sheet, use your pastry brush and brush a light egg wash on the top of each Smokey Cheddar Bite. Once all are coated, sprinkle some of Lauri’s Famous Alder Smoked Sea Salt on top of each unbaked Smokey Cheddar Bite. Bake for 16-19 Minutes (if frozen SOLID, you may need to add 2-3 more minutes) You will know they are done when they puff up just a little and start turning golden brown. (Make sure to leave them in oven long enough to get CRISPY Smokey Cheddar bites.) I add 2-3 minutes under the broiler, just to add extra color to the tops. Remove from oven and pull the parchment with the Smokey Cheddar Bites off the baking sheet onto a cooling rack and repeat with other half of dough. (NOTE: Mine never make it to the cool stage due to mandatory sampling, unless I stash them) These will store well in an airtight container for up to 6 weeks.
