Holiday16: Ham-into Cheese Bites

Ingredients
- 1 (8 ounce) ham steak, cut in large cubes
- 1/3 cup chopped red onion
- 1/3 cup chopped roasted red bell pepper
- 8 ounces shredded Rumiano Extra Sharp Cheddar Cheese
- ¼ cup mayonnaise
- 4 ounces cream cheese, at room temperature
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- 2 cups panko bread crumbs
Directions
Heat oven to 400 degrees. Pulse ham, onion and roasted peppers in a food processor until finely minced and place in a large bowl. Add the cheese, mayo, cream cheese, garlic powder and black pepper and stir until combined. Chill in fridge for 15 minutes. Place the panko on a cookie sheet and lightly spray with cooking spray. Toast in the oven 2-5 minutes. Watch closely to prevent crumbs from burning. Once panko is golden and toasted, place in a small bowl. Scoop and roll the cheese mixture into balls (about 1 Tablespoon) and roll into breadcrumbs, pressing lightly to help them stick. Serve immediately.
