Grilled Cheese Pizza Pizazz


  • 8 slices Italian or sourdough bread
  • 4 tablespoons butter, room temperature
  • ¼ teaspoon garlic powder
  • 4 tablespoons marinara or pizza sauce
  • 4oz pepperoni, finely sliced
  • 1 cup Rumianos smoked mozzarella cheese, grated
  • 4oz canned mushrooms, drained
  • 2 tomatoes, finely sliced
  • 1 cup provolone cheese, grated
  • 2 tablespoons Kalamata olives, diced
  • ¼ cup basil leaves


In a small bowl, combine butter and garlic powder. Lightly butter one side of bread slices. In a large skillet over medium heat place a slice of bread, butter side down. Top this slice of bread with a thin layer of marinara sauce (about 1 tablespoon) and ¼ of the pepperoni slices. Top pepperoni with ¼ cup mozzarella cheese and ¼ of the mushrooms and sliced tomatoes. Top with final layer of ¼ cup provolone cheese, olives and basil leaves. Place final layer of bread on top, butter side up. Press sandwich lightly with spatula. Flip sandwich when bread has turned golden brown. Continue to cook until the other side is browned. Repeat process with remaining sandwiches. Makes 4 sandwiches
