Grilled Caprese Pizza with Mushrooms

- 1 pint cherry tomatoes, sliced in half
- 8oz sliced mushrooms
- fresh basil, chopped
- 1/4 cup olive oil
- juice from 1 lemon
- salt and pepper to taste (we use Pink Himalayan Sea Salt)
- pre-made pizza crust (we used a whole wheat, ultra thin crust)
- 5oz (1/2 block) Rumiano Organic Mozzarella Cheese, sliced or shredded
Mix tomatoes, mushrooms, basil, olive oil, and salt and pepper in a medium bowl and refrigerate for at least one hour.
Preheat grill to medium heat. Assemble veggies and cheese on top of pizza crust. Turn grill to lowest setting, place crust directly on grill, close lid, and cook 8-10 minutes or until cheese is melted. ENJOY!
