2015: Eggplant Parmesan Crockpot

Ingredients

  • 3 medium eggplant cut into cubes,
  • 1/2 cup grated Parmesan Cheese
  • 3 cups tomato sauce
  • 2 TBSP Italian Seasoning

Directions

Mix all well. put it all in the crockpot. Cook low 6 hours. Dish it out & top with Mozarella & Parmesan as desired.
