One of our beloved family traditions is waking up to a hot delicious breakfast Christmas morning. There is nothing better for that occasion than these gorgeous breakfast tacos filled with chorizo, eggs, green chilies, and a generous sprinkle of Rumiano Original Jack and Medium Cheddar Cheeses. Just before serving, they are topped with a silky mornay sauce also made with Rumiano Jack and Cheddar. This savory, spicy, and cheesy breakfast is certain to put your family in the holiday spirit.

For filling, chicken cream corn and Monterey jack cheese. For pie crust, I used canned crescent rolls and shaped the crust into a triangle to make it look like a Christmas tree. I got inspired by my mothers' chicken cream stew she used to make on Christmas when I was a children. Somehow she made this as a Christmas meal (I still don't know why she made this). I loved it but what I loved about this stew more is next day. I had the stew with warmed croissant which was my comfort meal. I sometimes make her stew with my twist which is CHEESE. This recipe is one of my husband's favorite. I make this as our Christmas meal and save some of the filling and eat with croissant next day (without husband).

Several years ago we discovered that my son was gluten intolerant. While I was thrilled to have found out the reason for my son's health woes, I was somewhat frustrated as I navigated this new gluten free world. Even though my son is only 10 years old, he is quite the optimist. One day he exclaimed, "At least I can still have cheese!". Yes, he could still have cheese (which he loves). One day I had the thought that I could try to make cheese "crackers" simply from cheese. Everyone in our family adores those little bits of crispy cheese that often get left behind on a baking sheet. So, I gave it a try, and it totally worked. Now, these 100% cheese bites are a regular in our home. I love how I can switch up the flavor by using a different cheese. In this recipe, I swapped out the traditional grain cracker, and used my cheese crackers. These are super simple to make and are quite delicious!

Every year, green beans casserole is served for our family Thanksgiving and Christmas party and I pass it because I don’t care for it. But it is one of traditional holiday side dish and I love French-fried onions! So I made this for just myself using my favorite ingredients, onion, almond milk, smoked mozzarella cheese and French-fried onions. Smoky nutty flavored sauce, tender sweet onions and crunchy fried onions in a casserole! When I scoop it up, melting cheese is coming out which gives me extra happiness I just eat this all by myself!
