I'm always inspired by my traditions and my Latin flavors when I cook. This sandwich is "me" in a small bite. It takes me back too my childhood, I can picture a nice hot summer day with my family growing up (nine children) all around the kitchen table and mom creating a great breakfast or lunch for us. This sandwich is that, breakfast and lunch at home. A Chicken cutlet light breaded milanese, a creamy, buttery and mild almost melted slice of Monterey Jack cheese, grilled grapefruit & arugula salad with spicy chipotle, honey and lime dressing plus a runny egg created an explosion of flavors in my mouth. I put it all together inside of a toasted Mexican cemita bread. From my family to yours. Enjoy!
