If there were two cuisines my family would be asked to pick as their favorite, Mexican and American would be the choice. We as a family love our sandwiches and our mexican sauces. So everytime I decide to make Mexican at home, I end up with a lot of avocados. The same thing happened when I came up with this recipe. I had an avocado in the refrigerator and we were planning to make sandwiches. That's when I pulled out the plump green fruit and decided to give it a makeover. I sliced some onions and tomatoes, buttered my bread and added lots of pepperjack cheese. The result was a perfectly grilled gauc sandwich. As I sliced the vegetables and not mashed it like traditional gauc, I named this one Deconstructed Gauc Grilled Cheese. What started as an experiment has now become a family favorite. I don't wait to be left with extra avocados, I buy them specially to make this grilled sandwich. And yes, more the cheese in this one, the better it tastes!!
