I was raised in a family of eight children and we loved potatoes. They were a staple in our household so when I had children of my own the tradition continued and I got pretty creative at finding new and fun ways to enjoy them. I created this recipe because I felt the potato deserved to be showcased and presented in a new and elegant manner. It has become a fun holiday favorite.

My husband & I first tried cheeseburger soup at a charity beer & wine tasting event. We loved it, but it was a bit thin, so I decided to create my own with a chowder consistency that would appeal more to the meat & potato guys in the family.

Holiday2016: Raclette

It's a old Swiss traditional to eat Raclette, melted cheese for the Holidays, usually for Christmas or New Years. This warm cheese dish originated in the Valais canton of Switzerland where farmers and herdsman would make a meal of cheese melted by campfire or hearth, potatoes and pickles. Historians conjecture that at some point the cheese got too close to the fire and the melted cheese dish was born. The cheese and the dish have been documented back as far as the year 1291 and at that time was called Bratchäs. There has been much evolution of the dish since those early days. Today besides the requisite potatoes and pickles any number of foods are eaten with the cheese including fish, poultry, vegetables and sometimes even wild game.

I was looking for a two-bite cheese appetizer that tasted delicious, looked attractive and showcased Rumiano's Chipotle Cheddar and Pepper Jack cheeses. I hit upon my idea after enjoying creamy profiteroles at a friend's party. I realized that a savory version of the fluffy pastries would be the perfect container for whatever fillings I decided to use. After many experiments I found the perfect combination, adding Rumiano sharp cheddar to the dough for an extra kick. Be warned- these puffs are addictive!

Since we're usually not home for lunch on Saturdays, I had to think on my feet and see what we had. Monterey jack organic Rumiano, check! Kielbasa? Check! Peppers and onions? Check! And there ya have it! Kielbasa Grilled Cheese was born.

This is a very tasty tart great for a light lunch with a mixed green salad.... the leftovers (if there are any) are wonderful cold. This even makes for a nice savory breakfast. The first time I made this I was in Ireland visiting friends, we had a long lunch hanging out, watching the rainshowers outside and then rainbows. It was a wonderful afternoon spent with wonderful people.
