Grilled Chicken, Bacon & 3 Cheese Sandwich

I created this sandwich for a grilled cheese party at a friend's house. The inspiration was the chewing gum we had as kids that had a liquid center, so it spurted in your mouth when you bit into it. I wanted my sandwich to do the same thing. And it was a huge success. Now it's the #1 thing that gets requested whenever I go to a pot luck party.

I made Korean flavored BBQ with thin cut beef steak and scallions seasoned with my original BBQ sauce. Gochujang and cream cheese are great match so I added my grilled cheese sandwich. Sweet spicy BBQ and two kinds of cheese are playing tasty harmony.

I've never met an apple recipe that I don't like. Once the fall and winter months arrive, you can be sure to find a homemade apple treat ready for the taking. Whether it be homemade apple sauce, apple crisp, of muffins, we love them all. My family's all time favorite apple treat is apple pie. It has been a part of every holiday dessert table for as long as I can remember. I never fuss with or change my recipe. Last year while enjoying Christmas dessert, a guest asked me if I had ever added cheddar cheese to my pie. I believe that I gasped. "No, I would never do that." She began to tell me that many people do. Well, I tucked that idea far away, that is until today. As I was trying to think of a unique use for cheese for my entry, that conversation from last year popped up. So , while I was not willing to change my pie, I was more than willing to experiment with a variation of my pie. You know what? These miniature apple pie cookie cups, topped with a cobbler topping filled with cheddar cheese are deliciously addictive. We liked them so much we agreed that they should be part of this year's Christmas dessert table...right next to the apple pie.

My favorite Thanksgiving side dish. Instead of green beans casserole, I make this dish, Brussels sprouts casserole which has creamy and little bit tangy sauce and crispy cornmeal topping. This dish has wonderful flavor, creamy and crispy texture and as a bonus, lots of health benefits. Since I make this for just myself and my husband, this is 2-3 servings. If you like this and make more, please double the ingredients and cook in a large casserole. In that case, baking time might be different. Please check your oven after 10-12 minutes.

Holiday food can be quite heavy...delicious, yes, but rich and sometimes, just too much. Knowing that I would have guests over this Christmas in the afternoon, I wanted to come up with a lightened up appetizer to serve to guests as they wait on Christmas dinner. I've shredded and melted a block of Rumiano Medium Cheddar Cheese on a baking sheet. Then squares of the melted cheese were cut and formed over the underside of a miniature muffin tin. With beautiful cups made only of cheese, I filled them with a quick and simple chicken Ceasar salad. Quick, easy, unique, and lightened up!

Many people think of turkey, roast beef and ham as holiday staples. But growing up in a coastal town, our family has always added seafood to our holiday menu. On Christmas day, my mother would always have her traditional crab dip & chips and plenty of seafood sandwiches out for snacking while we all helped in the kitchen preparing the big dinner. My Crabby Cheesemas Melts, smothered with Rumiano Cheddar and Jalapeno Pepper Jack, have become a tradition in my family for our holidays. The addition of red bell peppers, green onions and parsley make them look so festive on the holiday table.

I am inspired by what is in my garden to develop recipes. Seasonal kale, beets and apples were the ingredients that formed the foundation of this salad. I wanted to show off holiday colors but I needed a spicy tangy topping/dressing to enliven this dish. Rumiano Sharp Cheddar was the key to this gremolata style topping. The result is a delicious nutritious salad perfect for any holiday occasion.
