Jack cheese originated in California in the mid-1800s, it is a cows' milk cheese that can be sold as a young, high-moisture semi-soft cheese or aged to become a hard grating cheese.

The young version melts very well and is often used in Mexican cooking. It has a fruity flavor and aroma, but it also has a bit of a tang.

The aged version, called "Dry Jack" becomes golden after two or three years and is nutty, still somewhat fruity, and moderately salty.

High-moisture Jack cheese is often made with flavors, including hot peppers, pesto, onion, or garlic.
